i fitted a Sendowtek Barbecue Thermometer with Dual Probes, sensors and cables can deal with 250C+
bluetooth interface with android simple, app has custom alarms and alarm goes off if bluetooth connection lost

may be worth collating temperatures for various setups and conditions ?

KAD 44 in Aquador 26, 3400kg, 3000 revs, 20 knots, turbo - exhaust elbow junction 120C, air into intercooler 110C
 
So what’s it really showing you? The turbo gets hot, we know that.

I would measure intake air after the intercooler. That’s what goes into the engine after all. If that rises then you can check air filter and intercooler.

As for after the engine, stick it on the elbow. At least that will give some indication of cooling water flow issues.

Measuring egt has been done to death and not achievable with a bbq setup :)
