Fairing

I have to re-caulk/re-seal interface between Steel ballast keel and wood hull then fair the join - any recommendations for fairing compound - red lead/white lead with putty perhaps?

Are you dropping the keel off? If so there is a gunge called Black Pudding, sold I think by Traditional Marine Supplies, which is apparently just what the Surveyor ordered, so I'm told.
