Just catching up on this, well done for having the energy to go through such a massive overhaul.
What are you putting down in place of the teak deck, are you using fake teak or paint?
Also I'm surprised that you're removing the trim round the doors etc. surely it's there to protect the edges of the veneer from wear?

Hi Rob. We're painting the decks, but not before a layer or two of epoxy and fibreglass, which will be filled and fared before spraying.

The trim isn't just around the doors, it's everywhere and makes the boat look dated. I really don't think it was added to project the edges from wear. Nothing a few coats of varnish can't sort out.
 
I'll be interested to see how you finish off the decks, as our next boat has a serous outbreak of treadmaster that will have to be stripped off at some point. I'm leaning towards kiwigrip as a way of finishing it, although I would use fake teak if it wasn't so damn expensive.
