Escape hatches on cats

Maybe they are glued shut. Did you try opening one
Leslie Bennington RN DSO and Bar DSC and 2 Bars, skipper of HM Submarine Tally Ho in the far east would have the hatches welded up before heading out on patrol from Trincomalee (apart from the one in the conning tower). He had nearly lost his previous command , HMS Porpoise, when a hatch started leaking badly after being depth charged. He had also heard of how the Japanese treated their prisoners, and told the crew, that should they be sunk, they were all better off dying with dignity aboard than attempting an escape and suffering capture and imprisonment.

Not suggesting this is a good strategy for multihull sailors.

Whatever happened to drowning like a gentleman?

BTW, it may be worth mentioning that I have no gentlemanly pretensions, but AFAIK, no one ever flipped a Catalac ;)
Not a standard one.
I've tried many times and luckily failed ! Acceleration, sideways was quite interesting on one attempt. Boat sailed quicker and better with suitable reefs in place.

That is almost universally true with multis. If there’s too much wind for your sail plan, you go bows down, sideways and tippy all at the same time. It’s not fast.
