Ensign staff

I would like to make a curved ensign staff for my small yacht.
I assume that it can be bent with the use of steam but am wondering what the best wood to use would be. If oak do I need to find "green" oak?

These are quite common in Holland and are available in chandlers over there. I suspect if you shop around you will also find them over here.
