Engine checks/inspection

So we have been out a few times on our MOBO a few times and had no engine issues but there is very limited service history and the filters have a date "They were changed" written on them which is not exactly proof of
anything so I getting them inspected and serviced, is there anything on the list below I have missed off?

The engines are a pair of 250HP Ford Sabres.

Hoses - Check/Replace
Clips - Check/Replace
Belts - Check/Replace
Anodes - Check/Replace
Rocker cover gaskets (weeping?) – Check/Replace
Heat exchanger - Flush
Coolant levels - Check
Anti freeze % - Check
Fuel Filters - Replace
Oil Filters - Replace
Air filters - Replace
Gearbox/engine/ fuel injector oil – Change
 
If coolant age is unknown perhaps it should be changed since the corrosion protection properties diminish with time. After finding crud in the cooling system I have decided on more frequent coolant changes ... every two years maximum.

As I will have the heat exchangers removed and cleaned, new coolant will be added but the two year interval is good to know, thank you.
