I am fitting a new Eberspacher D4. It comes with a fuse block for the live supply and the feeds to this will come direct from the L + N battery bus bars, not though the fuse panel. I would like to install a breaker in the live and neutral feeds from the batteries. I can't find a suitable 12v breaker / switch. Can I use a good quality domestic 30A, two pole switch and ignore the earth?

Unlikely. The domestic switch will be rated for 30A AC. Its rating for DC current is likely to be very much less.(this is due to the arcing which occurs when you break a DC circuit). You should not have a problem sourcing a suitable switch or even a breaker though.

Blue Sea 30a 12v Dc combined breaker / switch, Aquafax part 8-27222, not overly keen on switches in heater circuits due to inavertant switching off in full flow but if you are aware of the potential for damage and site the breaker accordingly then the combined circuit breaker & switch is probably a good option.
 
Now that's interesting, because I have a very complicated Victron charging system that shorted out while the previous Eber was being worked on. I'd just like to be able to isolate the heater if I needed to work on the rest of the system.

I'm not sure how a charging system can be "very complicated", unless it's been poorly specified. And I can't see how it can have "shorted out" due to work on the heater. All it needs is a fuse in the cable supplying the heater.
