Do I grease my gland too much?

Thanks for that. IIRC Tides Marine seals get very favourable reports on here. How many hours work for a professional to change?

I love replies that begin 'it all depends'! The shortest time is with the boat ashore, sufficient clearance for the prop to withdraw far enough for the shaft to clear the coupling, if the old seal will then clear the gap, if the coupling comes off the shaft easily, if the new seal goes on easily, if there are no unforeseen problems, then well under a day.

OTOH if your boat has a prop that is close to the rudder and not offset it will need to be removed. As you no doubt know from these pages, this alone can take a day. And so it continues. In the worst case it could best part of a week.
