I've just read a post about refurbishing a water pump and orientation of seals. I always (well nearly) take photos of things that I strip down so that they can be put back correctly. It's soooo easy these days. Incidentally I have a Pentax W20 which is great on the boat - water and dustproof - and can even take video clips underwater.
 
Probably already mentioned but your mobile phone camera is also useful for getting into those awkward spots for close ups of leaks , reading serial numbers etc, the images can be zoomed in on site making it a pretty handy tool.
 
Yup, I do the same. Beforte digital cameras, I used to make drawings of things before I took them apart but taking a snap is so easy.
