Digital Charts, GPS, Tablets, Smart Phones, Apps... I have a lot to learn!

You need to position the resizable box over the area on the base map you want, then click Download. It then downloads only the area you want so you don't overload your device with detail you don't need. From your images it looks like you are looking at a base map not a downloaded map.

Yes I downloaded the HD version for tablets.
Either I am doing something wrong or the install isnt right because I am not getting the functionality I see on their demo. I will persevere though as, if I can get it working, it looks great!

Thanks for the info

When clicked it offers a resizable box with a green bar at the bottom titled "download map".
When I click that it "requests" then downloads, but no change in detail appears even when zoomed in.

Was the resizeable box over the area (Thames estuary, it seems) that you're interested in? It will only download the real charts for what's inside that box. If you downloaded, say, Cornwall and then looked at the Thames, you wouldn't see anything.

+1 for Navionics on Android. They have recently released an in-app add on for about £2. which gives you much better route planning (leg distance and direction) than the base software. I use it on a Samsung 10" and have used it for cruises to Brittany and Holland. The "UK and Holland" chart bundle seems to cover the bit I want better than the "Europe" bundle so make sure you check the areas covered before you buy. A waterproof cover is a wise addition although ridiculously expensive (£100) compared to the cost of the Tablet. Some of the menu options are not very intuitive so do play around with it before you go out with it but as far as I'm concerned you get a fully functioning Chart Plotter for a fifth of the price of comparable (in screen size) marine one.
