Does anyone know who makes/stocks these?
They are of 2 types - one is a bolt with a hexagon head which sits on a plate which can be rebated into the floor and match up with a threaded plate underneath. The other type have a form of tongue which turns and locks under the adjoining board or bearer. I am in France and have looked at most locals B&Q ironmongers etc. but without any luck.
 
The second type you mention are supplied by Timage, part no 1100c or 1100b, but these are heavy duty - I've used them for locking down the opening hatch in the cockpit to prevent opening if inverted! They are surface mounted and are 90mm Diameter so are probably OTT for your purpose.
Why not screw them down with stainless screws at a few strategic places, assuming you don't intend removing them frequently, this is what I've done on all the floorboards in the saloon.

I really don't like the idea of fixed down sole boards...... you never know when you might need to lift them in a hurry....

Personally, I prefer 'em just fitted in place, and held by gravity, and risk them getting a bit wayward should we end up with the keel not pointing quite downwards.....
 
Unlike Morgana, I never want to see the contents of my bilges flying round the cabin - as I keep beer and wine down there, not to mention plugs, mallets, spares, all manner of detritus.....


You can use Camloc 1/4 turn fasteners, they are on my long term christmas list.

These can be secured by pushing down into a prefitted receptacle in the floor, recessed into the sole board, then turned 1/4 turn. They can be end sealed if required, and released by a coin or small driver head - in a 1/4 of a turn.
Some posher ones are push push flush fitting, so no tool needed to put them in or out.

These are used for aircraft floors, access panels etc, and quite easily installed. Available in a range of sizes and loads.

Not cheap of course.
