Use either piano wire from a music shop or mig welding wire also works.

A mate of mine who is in the upholstery trade just cut me an infill cushion out of a bit of foam he had spare.
He used an electric carving knife and it looked good to me. When asked about hot wire cutting I was told that the sealed edge can be a bit crisp and the covers can wear more and can fail prematurely. HTH

For straight or almost staight cuts, a fine tooth hand saw works well.
