Is there anywhere in Crete or the Greek Islands where I may be able to combine a summer holiday with a 3-5 day "try sailing" course or such like. Any help greatly appreciated.
Club hotels in various Med locations and they have a fleet of day yachts (a bit tired small ex charter boats c 30 ft) that are free and allocated on a reservation basis when you get there. You need to demonstrate some degree of competency.
Or you can sign up for a 3 or 4 day yacht course which my wife did in Vounaki and throughly enjoyed (as a previous non sailor) before we went flotilla in the second week.
Of course their holidays are not cheap but are pretty cost inclusive - didn't stop the extras bill being surprisingly scary though!
Maybe Neilson aswell but I don't think they have day yachts.
Sailing Activities do something like you are looking for, but quite honestly I could not recommend them, at least based on the boats I have seen. I spoke to one charterer at some length, in Sivota, and he was far from pleased with what was provided.
As said, Sunsail do something similar but as an absolute beginner you might be better off having a Club holiday, where the boats on offer are not quite what you are looking for.
Neilson and Sailing Holidays seem to be good for tuition in cruising boats, but with different methods used. Neilson give a four-day tuition course, with a skipper assigned to you, in which you will cover all aspects of berthing and sailing. While not sailing, their hotel in Nidri is available for accommodation. Sailing Holidays provide full-time lead-boat training during the flotilla. Every boat gets individual attention at every berthing. We have been most impressed by this way of teaching, and by the attentiveness of SH staff.

I agree wit Vyv, though I'd say Neilson was best for complete novices, and their system works particularly well for couples, since they'll work you up as a team. See Neilson Beginners Page
With Sailing holidays, you do need some sailing experience . . . and ironically, the owner's name is Barry Neilson . . . no relation!
Sunsail are expensive, and they do catch you with a lot of extras.

there is someone on the forum who has a sailing school in the Greek Islands, who may be reluctant to come forward for fear of being seen to be advertising.... Cant remember the name, but I've had some excellent advice from her.
