I also regularly do full roast dinners with two burners and an oven.I have a 4 burner hob on board and can't realistically use more than two due to space. I cooked a full roast dinner on board in November and only used two burners for that so I'd say stick with two and a pocket full of cash.
To answer Stemar, yes it's fully gimballed and a proper boat cooker.

I’ve got a 3 burner and don’t need it. But the oven and the grill are the best thing since (six slices, all perfectly toasted at the same time, of) sliced bread.

which I had on Tranona. Cast iron hotplate with two burners gives lots of flexibility and a good oven. Excellent for baked spuds but I cooked many roasts in it as well.
