Cooker - 2 or 3 burner?

I have a 4 burner hob on board and can't realistically use more than two due to space. I cooked a full roast dinner on board in November and only used two burners for that so I'd say stick with two and a pocket full of cash.

To answer Stemar, yes it's fully gimballed and a proper boat cooker.
I also regularly do full roast dinners with two burners and an oven.

which I had on Tranona. Cast iron hotplate with two burners gives lots of flexibility and a good oven. Excellent for baked spuds but I cooked many roasts in it as well.

I love these. I used Taylor’s paraffin stoves for most of my sailing career. For those who don’t know, they boil a kettle much faster than propane, but by using the hot plate they can be made to simmer very gently. The GN Espace oven and grill are even better, though.
 
We have a 3 burner and have never used more than 2at a time although as they are different sizes, not necessarily the same two used together. In fact as liveaboards with shorepower we use an electric steamer, a n electric George Foreman grill and an electric halogen oven/air fryer as well as electric kettle, food processor and toaster. When off grid we have a 3 part steamer and a pressure cooker to use on the hob. Using electric stuff cuts down greatly on gas usage plus minimises condensation especially on days we do not open up.
