To actually tack would take at least ten minutes, to simply throw the ship through the wind without tacking would have put her aback and possibly endangered the rig (not convinced in this case personally as it doesn't seem that windy, but it explains why it's not an instinctive reaction) and depending on the balance of the particular ship and what sails are set, may not even be possible. There's a relatively narrow windspeed range in which a square rigger can bring the bow through the wind, too little or too much and they have to wear instead.

Another point that I don't remember coming up in the original thread is if they had crew on the yards, either working or just skylarking. Bring the ship aback in any breeze and the sails will do a good job of trying to knock those people off the footropes. Last thing you need is to add a multiple rescue aloft to the situation.
