Those flat metal clips that fit into a slot cut around the outside of a cylindrical part. As used, for example, to hold the top plate onto a non-self-tailing Lewmar winch. Consisting of a two-layered spiral, a bit like a keyring but made of flat sheet rather than round wire.

What are they called?

Bonus points for any suggestions of where I can buy one with 51mm inside diameter, as used to hold the bottom cover on a Selden roller furler upper bearing.

(No Selden suppliers, please, unless they're selling it for the same sort of price an industrial circlip supplier would :) )

Good find.
Spirolox is a now-defunct US trade name. As the link shows, the parts are generally called 'spiral retaining rings', on both sides of the pond, (although Americans often use 'snap ring' for a regular circlip.) Google throws up plenty of hits.
