Cheap, simple, light weight boat to shore vehicle for cruising. Suggestions?

I would vote for two sit on kayaks. .... They are pretty easy to lift aboard and lash along the guard rails if you have a bit of space.

Have you done this?
I would think they take up a lot of space?
Boarding might be OK with a sugar scoop stern, not sure I'd fancy it in weather, with high topsides?
Agree they are a whole new flavour of enjoyable boating.
 
Afraid so!! We often go to the boat with two kayaks and an inflatable (usually with an outboard). However our sailing is usually pottering in Chichester harbour with 3 children so we usually tow the kayaks. But I have lifted them on deck before, the Perception Scooter would be easiest to stow. You are right, they aren't ideal if you don't have the space. My point was more that rowing an inflatable in adverse conditions is a lot more challenging/risky than a sit on kayak. And we climb aboard them from a ladder (which would not suit everyone). "in weather" all modes of tender are risky but I would argue a sit on is safest, although pretty wet. Swinging an outboard on and off a dinghy transom is no fun either.

You can be remarkably dry in a sit on kayak in nice weather
And remarkably wet in a dink "in weather"..........
