That made me think yesterday, more by luck than judgement did i find a nearly broken in line valve in a cooling hose.
Now replaced.
However if that had failed completely with the turbo on, the engine would have overheated very quickly.

Can i fit a sensor somewhere to cut the power to the diesel pump ?
Or something similar ? Or just as likely as any other major failure, e.g. Open injector etc.

I would think carefully about any device that automatically shuts down an engine. If the device operates it could be at the time you least want that to happen. In certain circumstances a wrecked engine could be more desirable than a wrecked boat, therefore providing you a warning at least allows you to make the decision to stop the engine taking due account also of the navigational circumstances at the time.
