Canal du Midi - practical advice needed

We are renting a peniche for a week in June - departing from and returning to Castelnaudary. A couple of questions -

Any "must see" stops?

We will be six adults and two children on board - should we bring / rent bicycles for everyone? We are slightly worried that if we don't all have bikes we will be isolated - that we might all want to cycle into town or to a vineyard. Any thoughts on this?

The canal du midi is very well organised for holiday makers in hire boats. Lots of towns and villages have installed moorings with power and water... On an almost daily basis you will have the choice of parking up in the country or beside a village or town... Not sure I would bother to bring bikes but if they are available from the hire centre could be nice to cycle down the tow path sometimes or explore with them.

There is a Navicarte canal book - No 11 which covers all of the Canal du Midi - shows stopping places, towns and villages together with nearby tourist attractions and could be worth looking at together with a map of the area... You can get it off my web site or other places in the UK and France... They will probably give you one with the boat but it could help you to plan your route perhaps. It is a beautiful canal and a lovely part of France.
