I think johnalison is referring to the same restaurant as I mentioned. We have also spent some time in that chandlers - very helpful! I really like Harlingen.
As far as sailing in shallow water - if you are in no hurry, some of the watt passages in the Waddensea are great fun and they are a lot shorter than going outside the islands (eg yesterday Borkum to Norderney = 21 M cf outside about 40 M, and we had a min depth of 1.6m - come on, you are East Coast sailors, that's deep!) sorry, serious thread drift!
