Can you confirm direct or indirect? With a heat exchanger or not?
For indirectly cooled the temperature is probably correct.
For a direct cooled, i.e. raw water cooled engine, the advice about holding your hand on the cylinder head is what I have always understood. The likely cause of your problem in this case is insufficient cooling water. The first thing to try is to clean the water injector behind the flywheel. It is possible to remove this without removing the flywheel but you may have to cut down an Allen key to fit it in. You will probably find that the perforations in the injector are blocked up with salts. If this does not fix it you may have to descale the cylinder head by filling the engine with solutions of Fernox, hydrochloric or phosphoric acid.
It is an indirect with exchanger and salt water feed is ok. There was a pipe T'd into supply from pump to exchanger which exited in cockpit presumably as a telltale, with this the temp of head was 100, after disconnecting it is 85 driven hard. Thermostat is 75 and opens when heated in pan of water.
