Simple answer - bolt or weld 2" or larger angle iron to the bottom edge of the keels inside and out to form a flange at least 4" wide. This will keep the boat upright in almost any but the softest mud, and will not affect the handling.

Re Eventide; thought the boat looked familiar. My E26 has that mod and has yet to fall over (famous last words!), sitting quite happily upright in soft mud at low water each day.
