Think you have done the right thing. All this "my 8hp can push 5 tons at 5.25 knots" willy shaking misses the point.

What really counts is quality of life during a long motor passage, 5 hours at 1800rpm is far more pleasant than 2300rpm.
 
Regarding where to put the instrument panel - I'm not familiar with your cockpit but on my Moody 33, it replaced the original panel position which was a removeable recess in the coaming. I did fit extra mounting screws as when the corner screws were tightened the panel bowed. I also fitted strips of self adhesive rubber to make a waterproof seal. Then I fitted a Perspex hinged cover over the top to protect the instruments and key.
Worked well for me, I liked the recessed panel as there is less likelyhood of inadverdant damage. Positioned in the coaming means I can start the engine immediately without leaving the cockpit.
 
I replaced a DV20 in mine and the instrument panel was the same hight but an inch narrower. So i made up the gap with a small piece of ply painted.
So it should fit in the same place.
I fitted the panel with the tacho too.
