Before heading off across the pond, I will buy myself a HUGE bunch of bananas ~ still green. How do I prevent all 100 bananas ripening on the same day?

You can speed up ripening by putting some in a brown paper bag. You delay ripening by keeping them cool. In a fridge, the skin may dicoulour but the fruit should be OK. Not sure the fridge is able to take 100 of them though.

They take a lot of valuable fridge space. I tend to spread them around the boat.

Some people strap the whole branch onto the the guard rail somewhere. It keeps them cool if theres a breeze and they say they ripen from the south side first - but are usually done in 7 days.

If you stick them in lockers they ripen at different rates, but if the locker gets hot then they ripen quicker than they will on the transom. If youve got lots of room in the bilge and can stop them sliding around and bruising then they do quite well - can last 14 days.

You can also try hanging them in a net from the saloon roof, e.g from the grab rail along with the other fruit. Keeps them aerated and out of the sun, but tend to bruise in collision with people's heads.

bring some monkeys along ....

some lateral thinking is needed. bananas are 100% energy soo .. firstly, the monkeys won't take up much space. plenty of exercise for them climbing up the rigging although this could present recapture problems later. if shrewd monkey buyer, you will have purchased particularly fit specimens who can provide alternative energy source so that you extract maximum conversion of energy and return on capital and they'll eat the bananas whatever the sell-by date.

So, balance sheet looks as follows today:
Assets: several monkeys
Liabilities: none
Current liabilities: none
Current assets: 100 bananas
Net current assets: 100 bananas

monkeys will only partially convert bananas into energy ... rest goes into body weight and a bit of deck swabbing for you. so ... for sustenance during voyage you capture them as required and cook them. offhand, haven't got a cook book but i'm sure gordon whats-is-name will give you a f**king recipe. never forgetting, if swept onto desert island, you might find that a fattened monkey is suitable barter for other essentials. also, whilst feasting away, you can invite the monkey's friends to watch whilst scoffing their recent colleague ... create a bonding relationship to show that you aren't really a bad sort, just someone who's a little higher up the food chain.

in a previous development, a mariner went ott and loaded up other animals, two at a time apparently, but little is known about whether he ever reached his intended destination or what and how he managed to feed them with. i could give you advice on keeping hens instead of monkeys but i'm sure i've given you food for thought ...

Don't even think about the monkeys, they will just fiddle with the windvane.

You could do worse than Joshua Slocum or Sir Frncis Chichester did, that is

1 - Put 2 dots, with an edible marker pen, about an inch from one end.
2 - Join up the dots all the way round.
3 - Wrap each banana individually in brown paper and tie gently with string.
4 - Collect into groups of 9, 1 in middle, 3 around those then 5 on the outside.
5 - Dip for 30 secs in a mixture of white rum or Vodka - to your taste.
6 - Wrap the whole lot with Newspaper or similar.
7 - Place in a hemp sack with an assortment of lettuce leaves and tie off.
8 - Keep in a coolish place.

There's an idea; preservation in booze! Stick 'em all in a barrel of rum. Unfortunately you may not end up in Brazil if you eat them en voyage. Hic.
