I have a Navico WP5000 Wheel Pilot and wanted to try and adapt it to a 26 foot power boat, Has anyone ever done this and is it a problem?

Yes i did on a previous boat, worked fine.

Fine provided that your steering is mechanical and not hydraulic, then you would likely run into problems.
