Well, it's the rig that's the cat?.....ooh could also include the Hunter Liberty or Minstrel - can't remember which had the cat rig?

I believe it was the Liberty that had the cat-ketch rig - same as the Freedom boats, hence the name (Freedom ~~ Liberty).

The defining feature of a catboat though is one big, preferably gaff, sail. Plus the hull shape and general style.

Quite, it was the Liberty, Dylan has a Mistral with the single mast and gunter rig.
The actual definintion of a cat boat is having a mast right up forward in the 'cats' with a single sail and, as you say, usually gaff rigged.
