Anchor chain stoppers

Blimey, am I right in seeing THREE anchors?!

No only 2.

A bruce I purchased as scrap and a spade look a like I made myself.

I do have a light danforth as a lunch hook I also made myself.

I was fooled by the vertical s/steel bit at the top of the previous pic, which looked like an anchor shank of some sort.
Out of idle curiosity, what's that, instead?

The vertical plate that separates the two channels where the anchor shanks lie?

Correct

It also provides an attachment point for my forestay (sorry it is a sail boat)

The pins dangling in the second photo locks the anchors one from each side. I can remove one from each side releasing one of the anchors but keeping the other secure.

A boarding ladder can also be attached to the slide on the front to allow boarding from the bow if need be

Yup, that was clear enough, but Rogershaw already answered my curiosity by mentioning the forestay.
That's what I confused with an anchor shank - obviously assuming that it wasn't meant to be used in that position, but just held there as a spare...
