I was wandering if the needed conversions can be implemented by reducing the scope of the project (same hardware) to control the pilot only and eventually making it one way (nmea to seatalk)?

I'll probably build this anyway and play with it before giving it to someone who still uses seatalk sensors / instruments. Thank you for sharing your work!
The ST 1000 will take NMEA 0183 direct. Details in the manual here ST1000 & ST2000 Cockpit Autopilot Tiller Pilots | Marine Electronics by Raymarine

However pretty limited to just tracks and waypoints unless you have a wind instrument.

Unfortunately only ST1000+ does that. The older (black case) Autohelm ST1000 lacks the NMEA wires described in that manual, it only has the yellow wire for communication and it was my understanding that the GND for seatalk is the shield not the power gnd:
