I am (gradually) getting my head around boat electrics. I understand 12v and 24v and the differences, I even get why an eberspacher 24v needs 24v for example, but why would a battery condition meter be 12 or 24v (specifically a NASA one)? Could it be converted in any way?

Two versions I beleive. A 12 volt one and a 24 volt one Necessary to specify the correct one I would think for the power supply to its electronics and maybe the max range of the voltmeter function.

Not altogether clear on the website though

That's NASA stuff for you, the Victron 602 is capable of up to 96v, I guess it goes to the robustness of the components and build.

In fairness, the Victron is over twice the price of the Nasa so I would expect a few more bells and whistles.
I wondered the same as the OP though and assumed that as the voltage is used as part of the data for the battery status the unit must be either set for one voltage or have
a setting to designate the voltage. one way cheap, one way less so.
