2-Pack paint and Primers

I am currently refitting/restoring an orkney strikeliner 16ft.

I am getting close to the stage of the project where I will start looking to apply high build primer to the hull.
I plan to use an epoxy 2 pack system that I will be rolling and tipping.
I have read into Hempels system and Jotuns systems but would like some advice on which product will give the best finish for my project. Jotun is currently my favourite due to price, but if the quality of Hempel is better I would be prepared to spend the extra. Any advice or different paint systems i should consider?

When I tried to paint my yacht with the "Roll and Tip" method it was an absolute disaster despite two of us on the job.

When I was at the paint distributor's outlet I offhandedly mentioned the disaster I had rolling and tipping. He wanted to know why so I told him the paint was drying too quickly to brush. He said had we known you weren't spraying it we would have sold you a slower acting hardener. He said the had three hardeners: normal (for spray painting) and a "slow" and "very slow" which I could have used.
