Put an engine/engines in a boat and make it go forward. As affordable as possible and note I don't say cheap as possible!!!! There is a big difference

My biggest concern with like for like is a) sourcing a pair of engines and B) knowing that those engines are not just someone else's crap because that's just buying problems down the line which is why an outboard is the most attractive option to me as they can be swapped out easy if they go wrong ��

How well will it work......... read the reviews and comments from the people who bought this package. All known and tested commodities. Chance of success 99-100%
You will need a new outdrive and transom assembly, controls and instrumentation.
Extensive quoting for such readily available.
Budget reasonably secure
Labour potentially iffy
 
I would add that I'd hit it in a single go. In the meantime use the boat as a house boat and get a nice little RHIB or SIB to cruise up and down the river with.
