Don't think there is any objection to using good galvanised screws - just that they are not as readily available as stainless which you can get in small quantities at any chandlers.
Whatever you think you are worth and he is prepared to pay. If he is the skipper and you the crew then probably £100 a day is reasonable plus food and flights. More if you are taking responsibility as skipper. Hard work to do that in 2 weeks with just 2 crew.
Higher should be OK. Mine is much higher in relation to the engine than your existing level. The original was lower and much further away behind the engine on the other side. The feed runs low down and through the shut off valve then up to the filter. Positioned there for easy access.
