If it's a Fulmar, I did mine recently with blocks/ scissor jack. The engine mount unbolted from the block allowing the replacement without disconnecting the shaft.
Not a whole lot of room though.
It has been suggested that air bags would be better to lift the motor.

The alternator may not like charging the Lithium either. I have a B2B to charge from the engine battery while it is running.

I changed mine on Sunday, using wooden wedges, and a car wind up jack. I do wish you'd posted this last week!

I have used sikaflex 291i between tides fixing a stern gland before. The last bit was done as water lapped my feet.
When I checked it later, it had set under water with no discernable difference to the air set side.

Two solar controllers is a fairly simple solution. It leave you with some redundancy and can be used to ease shading problems.
Why bother with your start battery though?

A 50w panel will be marginal to run the cooler. I had one the same, and had 2 x50w panels to run it. One each side of the spray hood to try and ensure a reasonably continuous charge. I ended up with a 100w one sat on the deck as well to keep the batteries up for a UK summer.
