I saw an add in my camping/caravan mag for a small AC unit (coolmycamper.com)
Madam was impressed and wants one for our camper.
We have electricty more often than not and this could be a solution when it gets really hot.
Possible boat application though there are restrictions as to how it could be mounted.

Most decent sized caravans around here (West Oz) have an airconditioner mounted on the roof. This runs on 240v site power. These A/c are compressor or refrigeration type.
However many people in their homes have ducted aircon from an evaporative A/c on the roof. This style has a fan which moves the air from the box to all rooms. The box is lined with wood wool of som,e sort through which water is pumped. The air passing over the water gets cooled. This type is cheap on electricity to run. However when the weather is humid it won't work. This type can also be bought as a portable a/c even a desk top.
Refrigeration type a/c must have a part outside dissipating the heat and a part inside cooling the air. This split type are very popular for houses as they are much quieter than the older type set in a window .
The advantage for a boat is that you can move the heat of a refrigerated type into the water making it more efficient and quieter. However these are expensive because they are custom made.
Really I think you should persevere with fans in the boat. The evaporative type may not be so successful because air is always more humid over water. Refrigerating type are bulky but work well. good luck olewill

Yes William H..... the desert cooler is the common name for the simple fan assisted water cooler. We used them extensivly in the middle east.
This did seem a useful item. It would certainly have made some of the really hot days in our camper a bit more pleasant.
Being in a camper which has four wheels we do manage to get beyond the Lancashire border from time to time.
 
We have an air con mounted on the roof of the saloon on our cat, it runs 24/7 during the summer when she is in the marina with shore power connected.

On trips we use a generator that is stored in the middle forward hatch, the exhaust pipe is extended and ends just above the water between the hulls. very quiet and very comfortable after a long day in the sun.

The only problem is they just don't last long in a salt environment even though they are supposedly designed for marine use. We get 3 to 4 years out of them then replace them, mind you have a hard life and run for many hours during the summer. Even harder when we have visitors from down south on board as they think 30*c is way too hot when the sun has gone down and adjust it maximum cooling on high fan speed, no wonder they don't last. LOL.

Saw this as well and spoke to very helpful chap there. He thought that the units could be 'inverted' so that they would work through a porthole into the cockpit then tried it in the factory and voila it does. Still not sure that it would cope with hotter climes but definitely still up there as an option.
