Yanmar 1GM10 top end overhaul

I'm about to remove and 'refurbish' the cylinder head on my 1GM10 and wonder if there are any pitfalls I should be aware of before I start! I've noticed that the new head gasket has a metal side and fibre side - does anybody know which way up it's meant to be fitted? The manual isn't particularly clear and the new gasket doesn't have 'TOP' written on it!

You could look here for a manual but my manual says the gasket is marked top.
