I had a Yamaha 4hp 2 stroke pushing my ( fairly slippery hull ) 22' 3000lb sailing boat across Channel in calms or motor sailing in very light winds, close reaching is ideal and can make surprising average speeds - which I'd recommend if using the engine.
A good bet is 2.5 hours at near max throttle per gallon with no wind assistance in calm seas, about 4.5-5knots for my Anderson 22 ( a touch more with the 5hp ) ; if really beating into seas it will be considerably less time, use the sails and go on fine reaches if there's any wind - of course in light winds and seas you will see a lot less consumption, but a ball park figure is 2.5 hours per gallon at near full throttle cruising -2 stroke.
It will also depend on your prop', hopefully long pitched for taking a cruiser to cruising speed but able to rev to max performance..
