Any recommendations please for protecting non-cosmetic woodwork in the cabin? I am referring to that beneath the sole and inside lockers etc where appearance doesn't matter as it does for the visible stuff.

Paint, B&Q "yacht varnish"?

Bilge paint (e.g. "Danboline") beneath the sole, inside lockers I use white gloss: easier to see if it needs de-mildewing, etc. than varnish. Anywhere else, and I wouldn't bother with anything at all. The builders didn't, and most of it's lasted 40-odd years so far.
 
For a life times no hassle.

Use an epoxy resin such as west, east etc. Make sure the the wood is completely dry and free of dirt, oil and contaminates A good sand helps.

You need to thin the epoxy resin for it to penetrate better. See the manufactures instructions for whats best and how to apply. Its quite easy.
