Exactly, but the definition can also apply to vessels having 3 masts or more, ie 4, 5 or 6, as long as they are all rigged with square yards.

I carry a BOAT on a davit and another BOAT on deck, does that make mine a ship?

LOA 21m about (deck 16m only) I wonder, I always say boat because I dont like "yacht".

I have seen a definition along the lines of "a ship is a vessel with more than one deck above the weather deck". This differentiates between ships and boats, but doesn't say when either becomes a yacht.

If a vessel turns to port, and you fall over the port rail, [pissed or sober] it's a boat, if you fall over the starboard rail, it's a ship.

BOAT owners are happy twice - when they buy a boat and when they sell the boat.
SHIPowners are happy all the time when its making money ............
 
I don't think there is any correct answer to this, apart from (maybe) the 'you know it when you see it' one.

It is all too muddled. You have container ships but supply boats. Passenger ships but ferry boats and so on and so forth. Then there are tankers, bulk carriers, gas carriers, sloops, schooners, barques, brigs, tugs, barges, ketches, cutters and yawls to name a few.

Boat and ship are just two terms used (sometimes interchangeably) to describe various craft that float.
