In the new boat there is a fair amount of worktop that is black mica(?) coated plywood. I want to install a replacement fridge which will mean I have to do some chopping about and making some new surface. I'd like it to match the existing stuff but have never consciously seen any for sale. Anyone know what it is called?

It's Formica that you want. Very durable, although somewhat brittle and tricky to work. Melamine isn't at all robust.
There's an enormous range of colours and designs.
Formica can be bought in sheets for sticking to a backing wood with contact adhesive, or pre-laminated onto ply. It's usually better to stick it on the wood yourself, slightly oversize, then dress back with a router.
Google should throw up plenty of suppliers.
