With the advent of high power, waterproof, easy-to-use, cheap, one pack adhesives, do we still need the messiness and uncertainty of two pack epoxies adhesives?

Yes, because there is more to epoxy than just being an adhesive. But for many gluing applications alternatives can be both easier and just as effective.
