Waste Water Tank

Most likely to be dictated by the size you can fit in. Holding tanks for the toilet (black waste) are usually separate from tanks for waste water (grey waste) and many bats (I would say most) don't have grey waste tanks and simply discharge sinks overboard.

Tek Tanks do a range of ready made tanks and we fitted one (toilet holding tank) - not sure of the size but 80 litres sticks in my mind. I would have gone a little larger as there are four of us but it was the biggest that would fit.
 
Get onto the Tek Tanks and Lee Sanitation websites and you will see plenty of information on designs and layouts of waste tank systems. As already noted size is usually constrained by space - particularly when fitting into an existing boat. 40-80 litres is typical and there are ways of getting maximum use out of the capacity.
 
I see no need to run the grey water to the tank, just pipe the toilet to it. The holding tank on ours is 50 litres and it's never been more than about half full. That's with 2 onboard at weekends. It does get emptied most weekends, as we put to sea most time we are at the boat. We have used it for 3 or 4 weekends in a row without emptying it though.

How quick it fills up might also depend on the amount of lager and/or curry you both consume :D

Agree with that. I've never seen a boat where the grey water waste is run into the black water tank. One long shower and you'd fill the tank. Having said that, I think its a good idea to run the grey water into a separate sump with its own discharge pump rather than directly overboard as you can turn the pump off if you are in an anchorage with swimmers about.

We are on the Thames and discharge our grey water into the river. As far as I know there is no restriction on inland water ways (in the UK) against doing this.
 
Balance

You may want to consider placement and size from the perspective of balance of the boat. As our black tank fills the boat takes on an increasing list which can be as much as 6" at the water-line (It is a 34' stern-drive mobo). The black tank was a retro-fit and is the only asymmetric installation.
Just a thought.
Of course, there may not be that many options available!
