Depth is no problem. Outside the big buoys there is a line of small buoys that marks the 1.5 meter contour. Stay well inside them and you will be allright. The bottom comes up quite steeply in most places.
Mooring will be possible on some, but not all of the islands. You will have to feel your way in.
Your length is going to be more of a restraint than draft in S Holland.
2m draft will get you into all waterways, but as other posters have stated, approaching islands might be hit and miss - the charts are pretty good in highlighting the troublesome bits.
In the Verse meer you will be able to make a nice circuit north and south of the islands, but diving in between could bring you up sharpish! And approaches to the marinas in the central section will be with zero readout on the guage, but you'll get in.
Veere itself is very nice - take a mooring on the long staging on the LH side - close to the entrance is best (right next to the very accommodating clubhouse - good grub and drink) There is a fairly active harbourmaster there - so be prepared for his helpful intervention. Don't even try the staging outside the walls - no water!
