Train from under the airport to Liverpool Street station, then its a bit of a fiddle but you need to get onto the LDR system, the final destination station is Customs House for Excel. The Circle Line takes you from Liverpool Street to Tower Hill/Tower Gateway then you can get on the LDR. There may be a quicker/cheaper/alternative way but that is the standard route.

DLR is Docklands Light Railway. The stop for the boat show this year is Prince Regent, not Custom House - Prince Regent is the stop after Custom House (you can get off at Custom House, but it's a long walk).

I used this last year and again this - much nicer way in as you walk past the pool area

Also when leaving you board ahead of the Custom House peeps and get a seat
