I might be being a bit dense, but how would you use these with fresh and raw water sensors? I mean, what would you use them for in that regard?

In that respect read engine water.

Stick/screw them onto a bit of suitable metal at or near the same temperature as the contents. In my case, I modified the fresh water temperature sender outlet to take two (mechanical) capillary sensors (then found that one wasn't long enough!). The end of the adaptor is ideal to mount one of these 'stats on and start bells a'ringin if over temp. More difficult with exhaust gases although I gues you could just dangle the 'stat inside. However, they are steel so wouldn't last long there. Think again!
