Maplin has a huge range of very neat plastic boxes - look in "Components", then "Enclosures", then "Plastic Enclosures". You could cut the bottom out of a box and glue it on, then screw the cover on.

I was looking for something similar to protect the back of speakers that project through in to a locker. We happened to buy some carry out bacon rolls from the coffee shop at the Crinan hotel the same day, clear rigid plastic, nice fit with a handy flange and still there after three years. The dog uses another one as an emergency drinking bowl.

If the instruments are in the cockpit, say over the companionway, you could use clipper pods if they are of the standard 110mm square type of intruments, if not then what has been suggested would work fine...

I used a couple of spare instrument covers, just drill holes in each corner for screws and put over the back, if you cannot put a screw in you can build up the corners and use velcro.

Mind you all depends on how far the instruments are sticking through.

Must it be plastic?

Neat varnished (or painted) plywood boxes would be easy for someone with your woodworking skills to make.
