Suggestions - Dinghy "sunsail/Neilson" style holiday over Xmas

So in the past I have enjoyed massively holidays over Xmas period with Dinghy/Windsurfing/Moutain Biking activity - with Neilson on Grenada and Sunsail on Antigua - both options don't seem available anymore. Not quite sure why

Xmas is the key so need really sun bathing style weather at this time of year which rules out multiple med based options.

The nearest option seems Neilson's Kenya based resort - but as Somali pirates have now started plucking tourists of the beach I am somewhat reluctant...

So any alternative suggestions ?

Did Neilson in Dominican Republic 13 years ago and that was great. Don't know if they are still there.
