My old Stowe Navsounder is showing signs of age and will soon need replacing, but,,,,, it works through two bronze transducers and a (Stowe) tilt switch which I want to keep.
how do I discover what frequency the old kit works at so that I can find new kit that will operate via the old bits?

It's almost certain to be a 200kHz system, Ian, and this is the frequency used by most popular depth instruments. If you'd like to check this out in more detail, I'd suggest you contact Airmar, who make the transducers supplied by virtually all the marine instrument brands.
