I would use Lithium water resistant grease as recommended for boat trailers. If you have a steel stern tube, do not use any grease that contains graphite. Graphite, being carbon is very high on the galvanic scale and might cause corrosion.

In actual fact Graphite is No 92 on the Galvanic table. Just a bit less active than Gold and Silver. There is absolutely no reason to think Graphite grease would cause corrosion. Total rubbish!

And I am told that I do not need any grease, and that water inside will do the job

So are there some stern glands that need grease and some that do not

Yes , there are some stern glands that require grease and some that do not. Those using mechanical seals typically rely on water lubrication and those using lip seals may rely on water, oil or grease. The seal on my own boat is normally just water lubricated (it uses lip seals).
