Looking for the pros n cons here..

Currently my bayliner has a rather past it 3 spoke sports wheel

I'm going g to change it as part of my dash refurbrefurbished, but I'm not sure if I should get a similar design, which is 11" diameter or go for a larger non centred type wheel (more spokes) .

I always thought a smaller wheel made for harder work in a car, but I'm not so sure with a boat?

Is there any rule of thumb? Or just what suits

My Trophy (made by the same company as Bayliner) had a large stainless "destroyer" wheel which was easy to use and comfortable. When I refitted my Harley 25 I ditched the Plastimo plastic wheel and fitted a similar destroyer wheel. It allows for finer adjustment and I find just generally easier to steer with.

I had a destroyer style wheel in my old sea ray, I changed it for a smaller 3 spoke wheel.

I didn't notice any adverse effects, if anything I think it may have helped when mooring. Single engine outdrive sports cruisers can be a handful til you get the hang of them ?
