Thought I would let you Scottish forumites know that I found a company in Hillington Glasgow called, Jetcut it, who will cut any shape of s/s or any metal which you require up to 6-8" thich, using water jet at 65.000psi, and precision down to 1/500th of a mm.
No connection with them, but am happy with the job he done for me, and at reasonable cost.
 
Water jet cutting is an excellent way of getting things done. With the thicker stuff you can sometimes get a visible taper through the plate, as also occurs with laser cutting. I personally reckon the finish is better with water jet cutting.

When considering the shape to be created, remember it's possible to get pilot holes cut so thet you can later spot drills in the correct place. In the extreme you can often get bolt clearace holes cut so that you don't need to drill a hole at all.

You can sometimes get a discount from the cutting firm if you are able to supply a profile in a 2D CAD format - say DXF or DWG as it saves them time in drawing it themselves before sending it to the profiling machine. Talk to the profilers about the formats they can cope with.
